Serves 8 to 10
2 1/4 cups self-rising flour
2 teaspoons of baking powder
1 teaspoon ground cinnamon
1/2 cup of superfine sugar
1/4 cup butter, melted two eggs, beaten
2/3 cup of milk
For the topping
Two eating apples, peeled, cored and sliced
1/2 ounce butter, melted
4 tablespoons of raw sugar
1/4 teaspoon of ground cinnamon
1. Preheat the oven to 400°F. Grease and line 88 inch cake pan. Sift the flour, baking powder and cinnamon into a bowl. Add the sugar. Whisk the butter, eggs and milk, then stir these in two.
2. Pour the mixture into the 10 make a shallow hollow around the edge and lay the apples around it. Brush with the butter, then scatter with the raw sugar and cinnamon.
3. Bake for 45 to 50 minutes or until A skewer inserted into the center comes out clean. Serve immediately or cool on a wire rack.
